Farms

Đà Lạt, known as the “City of Eternal Springs” is located 1800 meters above sea level in the southern highlands of Vietnam. Its pristine waters provide a natural environment to sustainably nurture the perfect sturgeon. It is here, atop the mountain that a small, boutique farm prepares delicious, natural caviar in these perfect surroundings.

Beginning with natural, flowing spring water, our Sterlet sturgeons are raised as “wild” as can be, very much like the days of old. Meticulous processing preserves freshness and we do not use any preservatives other than salt to retain the delicate flavors of our caviar. Each tin is sourced from a single fish, to ensure consistency and our “single origin caviar” is fully traceable back to the very sturgeon that produced the caviar. Our sturgeon produces roe from the age of 8- years onwards. The size of the roe is approximately 2mm in diameter and is gray with a tinge of green, similar to Iranian Osciétre. The texture is silky and smooth, with a long well-balanced after-taste. Our vision is to produce the perfect caviar with a single origin for the most luxurious experience. Caviar farms Chengdu, China

High above the city of Chengdu, the rural city of Dujiangyan sits quietly and is best known by most people for its extraordinary water system dating back 2000 years. The city is also known as the Origin of the Land of Abundance. The 2000-year-old irrigation system is reputed to be the forerunner of the world conservancy culture, and it’s the oldest and only non-controlling irrigation system in the world that is still in use. Not only is Dujiangyan a World Heritage Site, but it is also home to giant pandas

This area has been the best suited for our caviar farm since 1993 and has been listed as a protected site. With temperatures dropping to 3 degrees Celsius in the winters, this place is such an amazing place to raise our "big" sturgeons. Here, we have been very successful with our Russian Sturgeon (Ancipenser Gueldenstaedtii), our Amur Sturgeon (Acipenser Schrenckii), and Huso Dauricus, also known as the river Beluga. The environment enables the sturgeons to live free and comfortable in these huge lakes that have runoff water from snowcaps during the winters. It is hard to find a more clean and protected site such as our Dujiangyan farm to raise these majestic sturgeons.

Our famous Amur Prestige caviar is a hybrid between the Amur Sturgeon (Acipenser schrenckii) and the Huso dauricus, also known as the river Beluga. They are claimed to be the largest freshwater fish in the world, with a maximum size of at least 1,000 kg and 5.6 m. The Amur sturgeon is one of the biggest of the sturgeon family. Because we prize this fish so much, we have let them grow to maturity, 15-17 years before harvesting the caviar.

This famed caviar is derived from the one and only Russian Sturgeon, Oscietra Acipenser gueldenstaedtii. Prized for its color ranging from grayish green to a dark golden brown, these eggs have a beautiful shine to them, and the flavors are rich, nutty and leaves a lingering finish on your palate. Because we prize this fish so much, we have let them grow to maturity, 9 years before harvesting the caviar.

This gives rise to a larger and firmer caviar that pops at the precise moment it reaches your palate. We carefully add only 2.8% salt to cure the roe so that you can taste all the natural flavors of the Oscietra. This is a classic caviar that has adorned the tables of kings and nobles alike and is said to have been the favorite of the Tzars.g

Caspiar’s Imperial caviar is made up of two very traditional sturgeons who’s origins are from the famed Caspian Sea; Sterlet Sturgeon (Acipenser ruthenus) and Siberian Sturgeon (Acipenser baerii). These sturgeons have an average of 6 years on them before we harvest the caviar so that the flavors are more profound and the size is at optimal.

This caviar is distinguished by its small to medium, semi-firm to very firm eggs. Unique coloring ranges from tinge green to light or dark brown. On the palate, a robust nuttiness of cashews melts away into a smooth, buttery finish. The texture is smooth and inviting and pairs perfectly with traditional blinis and crème. Our Imperial Caviar is a chef’s dream as it is packed with flavor and low in salt (2.8-3%) so it compliments many classic dishes.

One of the rarest caviars on the market, the Albino Sterlet Sturgeon (Acipenser ruthenus), produces caviar with yellowish or white pearls. Nicknamed "White Pearl," this supreme caviar is soft to semi-firm and has a similar size to Sevruga, with colors ranging from white to bright gold.

The Sterlet Sturgeon (Acipenser ruthenus) is a relatively small species of sturgeon from Eurasia, much like the Siberian sturgeon in that it is a freshwater species. It is native to large rivers that flow into the Black Sea, Azov Sea, and Caspian Sea. With a maximum weight of approximately 16 kg, it is the smallest of the sturgeon family. Yet, the species delivers excellent caviar, once favored by the Russian Tsars, and is not commonly seen in Western markets. The Golden Albinos Caviar has a distinct flavor, and expect a pronounced rich flavor and a smooth finish with a tinge of citrus at the end. This caviar is produced in very limited supply each month.

Smoked with the perfect blend of Acacia wood, our salmon is praised for its delicate smoked flavor and with our special artisanal blend of herbs and spice rub from our acclaimed Chefs, our smoked salmon delivers an unheralded complexity of flavors. We receive daily deliveries of salmon flown in directly from the farms fresh, never frozen, giving it an amazingly silky texture, and rich, deep orange color.

Caspiar’s cold smoked salmon pastrami is made from the highest quality salmon, imported fresh and is never frozen. We expertly brine these beautiful fillets in traditional pastrami spices until they are bursting with flavor.

Dry cured and smoked in 100% local Acacia wood for that beautiful smoked salmon aroma. Lacquered with a blend of rich soya sauce and molasses, then dusted with Phu Quoc peppercorn and spices, our pastrami brings you a tradition born out of quality and shows you what it means to be artisanal.

Caspiar Small Batch Smoked Salmon Caviar is made of only the finest salmon roe in Japan. We import Japanese salmon roe to Vietnam, then marinate them in an artisanal marinade comprising of 2 types of soya sauce, premium Sake, Mirin and Yuzu extract to create a balanced lightness in the flavors. Sweet, umami and a tinge of citrus will accent the cold wood smoke of this salmon caviar. We then quick dry the caviar and smoke it in small batches with a blend of our own seasoned wood to bring out the sweetness of this amazing salmon roe.
